Stick with bbq or grind into sausage with a 50 / 50 mix of pork fat.

Other than that………slow low heat cooking. Croc pots are good, too……..fill it up with taters, carrots and onion.

Skin him, gut him, and bathe him in saltwater in the fridge for a day.

Boil him +/- 15 minutes, and allow to cool.

Dust him with salt pepper and maybe a little rub of your choice. Brush on some BBQ Sauce. I like cattleman's gold.

Wrap in foil and grill him on low indirect heat till he starts falling apart.

Pick him like a pig and make sliders with Kings Hawaiian rolls.

Back when i had dogs i used a lot of cajun recipes and subbed in coon meat to the recipe....there is a gland under each front leg that u should remove before cooking.....

Thanks and didn't know about the gland. Thanks. How big is it? Garden pea, butter bean or bigger/smaller. Just kinda trying to get an idea.

Pea size, i always cut them out but some may say it makes no difference...i ran them thru the crockpot till they were fork tender....
